If you do not have whole, peeled canned tomatoes you can substitute diced tomatoes.For the gremolata, you can substitute any type of vinegar for red wine vinegar and white wine vinegar. You can also substitute different herbs.
We highly recommend using thicker artisan bread for this recipe.
